Chicken Sopas

Ever since I was child I prefer eating fried chicken than any other chicken dishes around. When I was introduced to Jollibee it became my favourite since then. However, when I learned that I have to lessen eating red meats, I force myself to try other chicken dishes other than my forever love of course the fried chicken.

Now, I am sharing with you my creamy recipe that I'm sure everyone will love it. Honestly, it became my sought after meal nowadays.

We will just need:

2 pcs chicken breast, cut into strips
200 grams macaroni pasta, cooked
¼ cup cooking cream
1 cup chicken stock
1 can evaporated milk
1 onion, chopped
3 cloves of garlic
2 tbsp canola oil
1 medium carrot, cut into small cubes
Fish sauce and freshly grounded peppercorns to taste

First, sauté the onions and garlic in the pan with oil.  Mix the chicken strips and add the chicken stock & carrots.  Let it boil until the carrots softened.  Add the evaporated milk and cooking cream and let simmer for three minutes.  Lastly, add the cooked macaroni, salt and pepper to taste and just simmer it for another two minutes and it is ready to serve.  Please make sure that once we add the macaroni, it must be served immediately because it will absorb the liquid if left in a pan even in a few minutes. ☺
