Here's another chicken recipe that I would like to share with you today:
All you need are:
4 pcs of chicken breast, sliced according to your preference
3 cups of pure coconut milk
3 tbsp of mc cormick curry powder
4 large potatoes
2 medium carrots
2 thumb-sized ginger
1 medium onion
1 head of garlic cloves, minced
1 large tomato
1 medium bell pepper
2 long chillies
2 tbsp olive oil
1 small-sized cabbage (optional)
salt and pepper to taste
First, we will sauté the onion and wait when it will become
translucent so you can add the garlic and ginger. Add the sliced
tomato and put immediately the chicken breast until the meat will become
white. Add the curry powder with a little salt and mix it well. Put
the potato and carrot and let it simmer for two minutes and add the coconut
milk. Simmer it again for another 10-20 minutes or until the
carrots and potatoes are cook so we can add the bell pepper and long chillies. I love greens so I usually put cabbage or
pechay in this recipe. Just do not overcook the greens. Add more salt if
necessary and pepper to taste. Happy eating!
Please note that cooking this recipe is good if we are using the medium fire gauge especially when simmering.☺
